BBQ Chicken Skewers

Nothing says summer like barbecue chicken skewers loaded with colourful summer vegetables! And with the Lacanche Gas Chargrill, you can bring the barbecue inside. This recipe is perfect for backyard cookouts, weeknight dinners & casual summer entertaining as these skewers capture the flavours of summer in every bite. They can be made 24 hours in advance & grilled just before serving.

This recipe features both a homemade dry rub for the chicken & a homemade barbecue sauce for the skewers. As skewers are such a simple summer dish to serve, the addition of these two homemade elements really put this recipe over the edge.

Each skewer is brushed with the homemade barbecue sauce that adds layers of smoky, sweet & tangy flavour. This classic barbecue sauce taste amazing on pulled pork & ribs too! Pair them with your favourite barbecue side dishes such as pasta salad, potato salad & vegetable salad.

BBQ Chicken Skewers

Prep: 20 minutes
Cook: 15 minutes
Serves: 8 Skewers

Ingredients

For the chicken skewers:

  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder 
  • 1 teaspoon chili powder 
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 4 boneless, skinless chicken breast, diced into 1-inch pieces
  • 2 bell peppers, diced into 1-inch pieces
  • 2 medium zucchini, sliced 
  • 1 large onion, diced into 1-inch pieces
  • BBQ sauce, to finish (see recipe below)

For the bbq sauce:

  • 3/4 cup ketchup
  • 1/3 cup brown sugar, lightly packed
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons molasses
  • 1 tablespoon dijon mustard 
  • Salt & pepper, to taste
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 splash Worcestershire sauce 

Directions

For the chicken skewers:

  1. Soak 8 wooden skewers in water for 30 minutes. Stir together paprika, garlic powder, onion powder, chili powder, salt, pepper & brown sugar.
  2. Toss chicken in the dry rub & let marinate for 30 minutes as the skewers soak. Preheat the gas chargrill top to medium heat.
  3. Thread the skewers with the chicken, pepper, zucchini & onion. Repeat with remaining skewers.
  4. Transfer skewers to grill & brush with barbecue sauce, continuously brushing as the skewers rotate.
  5. Cook until chicken reaches an internal temperature of 165(f) degrees. Serve with additional sauce if desired.

For the bbq sauce:

  1. To a saucepan over medium heat whisk together all ingredients. Bring to a gentle simmer & continue cooking until sauce slightly thickens, about 10 minutes.
  2. Remove from heat & refrigerate until ready to use.
