They are the kind of dish that reminds you, at the first dip of bread into golden yolk, that the best things rarely need to be complicated.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Oeufs en Cocotte with Brie, Honey &amp; Crispy Lardons<\/h2>\n\n\n\n<p><strong>Prep: <\/strong>10 minutes<\/p>\n\n\n\n<p><strong>Cook<\/strong>: 25 minutes<\/p>\n\n\n\n<p><strong>Total time:<\/strong> 35 minutes<\/p>\n\n\n\n<p><strong>Yield: <\/strong>Serves 4<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>5 slices thick-cut bacon (or lardons), cut into \u00bc-inch batons<\/li>\n\n\n\n<li>1 clove garlic, peeled and lightly crushed<\/li>\n\n\n\n<li>1 sprig fresh rosemary<\/li>\n\n\n\n<li>1 tsp unsalted butter, for greasing<\/li>\n\n\n\n<li>1 cup heavy cream, divided<\/li>\n\n\n\n<li>150g Brie, sliced into 8 wedges<\/li>\n\n\n\n<li>4 tsp good-quality honey<\/li>\n\n\n\n<li>4 large eggs<\/li>\n\n\n\n<li>1 tbsp finely snipped fresh chives<\/li>\n\n\n\n<li>Flaky sea salt and freshly ground black pepper<\/li>\n\n\n\n<li>1 baguette, sliced on the bias<\/li>\n\n\n\n<li>Softened butter, for the bread<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 350\u00b0F (175\u00b0C). Set a kettle of water to boil.<\/li>\n\n\n\n<li>Spread the bacon into a cold skillet and place over medium heat. As the fat begins to render, add the garlic and rosemary. Cook, stirring occasionally, until the bacon is golden and crisp. Remove with a slotted spoon and drain on a paper towel or clean cloth. Set aside, reserving some for garnish.<\/li>\n\n\n\n<li>Lightly butter the inside of four cocottes. Into each, add a spoonful of bacon, then arrange 2 wedges of Brie on top. Drizzle with a teaspoon of honey and pour in \u00bc cup of cream. Carefully crack one egg over top, and season with flaky salt and freshly ground pepper.<\/li>\n\n\n\n<li>Set the cocottes in a deep roasting pan or baking dish. Pour the boiling water into the pan until it reaches halfway up the sides of the cocottes \u2014 this bain-marie ensures a gentle, even cook. Cover loosely with foil and transfer to the oven.<\/li>\n\n\n\n<li>Bake for 10\u201312 minutes for a runny, silky yolk; 13\u201315 minutes for a jammy yolk; or 16\u201318 minutes for a fully set egg. Begin checking early, as ovens vary.<\/li>\n\n\n\n<li>While the eggs bake, prepare the bread. Heat a grill pan over medium-high heat. Butter the baguette slices on both sides and grill for 2\u20133 minutes per side, until golden with pronounced grill marks.<\/li>\n\n\n\n<li>To serve, top each cocotte with a scattering of the reserved crispy bacon and a pinch of fresh chives.
