Add the chicken broth, then add enough water to cover the potatoes by at least 1 inch. Add the thyme and season generously with salt. Bring to a boil, reduce heat, and simmer until fork-tender, about 15 minutes. Drain and set aside (discard thyme).<\/li>\n\n\n\n<li>In a deep oven-safe skillet or cast-iron pan, cook the bacon over medium heat until browned but not crispy. Remove about one-third of the bacon and set aside for topping. Drain the pan, leaving about 1 tablespoon of bacon fat.<\/li>\n\n\n\n<li>Return the skillet to medium heat, add the onions, and cook until softened, 7\u20138 minutes, stirring often. Add the white wine and cook until almost fully evaporated.<\/li>\n\n\n\n<li>Add the onions to the cooked potatoes and gently toss until the ingredients are evenly distributed. Season with salt and pepper to taste.&nbsp;<\/li>\n\n\n\n<li>Return the potatoes to the skillet and pour the cream over the top.
