Laisser tremper pendant au moins 8 heures ou toute la nuit. Rincez et \u00e9gouttez les haricots puis ajoutez-les dans une grande casserole.<\/li><li>Attachez les moiti\u00e9s d&#8217;ail dans un chiffon \u00e0 fromage et ajoutez-les aux haricots avec les moiti\u00e9s d&#8217;oignon, le bouquet garni, les feuilles de laurier, le sel et le poivre et l&#8217;eau. Porter \u00e0 \u00e9bullition, puis r\u00e9duire et laisser mijoter jusqu&#8217;\u00e0 ce que les haricots soient tendres, mais sans s&#8217;effondrer (environ 1 \u00e0 1 \u00bd heure). Si le liquide de cuisson diminue trop avant la cuisson des haricots, ajoutez plus d&#8217;eau.<\/li><li>Une fois les haricots cuits, retirer l&#8217;oignon, l&#8217;ail, le bouquet garni et les feuilles de laurier des haricots.<\/li><\/ol>\n\n\n\n<p><em><strong>Faire le rago\u00fbt de champignons sauvages<\/strong><\/em><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dans une grande po\u00eale, chauffer l&#8217;huile d&#8217;olive et ajouter l&#8217;oignon, l&#8217;ail, la carotte et le c\u00e9leri. Cuire \u00e0 feu moyen jusqu&#8217;\u00e0 ramollissement (environ 5 minutes). Ajouter les champignons et cuire jusqu&#8217;\u00e0 ce qu&#8217;ils soient l\u00e9g\u00e8rement dor\u00e9s et que l&#8217;humidit\u00e9 des champignons se soit presque \u00e9vapor\u00e9e (environ 5-6 minutes). Assaisonnez avec du sel et du poivre.<\/li><li>D\u00e9glacer la po\u00eale avec le vin de cuisson, en veillant \u00e0 racler les morceaux bruns du fond de la po\u00eale. Ajouter la p\u00e2te de tomate, les tomates broy\u00e9es et le bouillon de l\u00e9gumes. Porter \u00e0 \u00e9bullition puis r\u00e9duire \u00e0 \u00e9bullition pendant 10 minutes, ou jusqu&#8217;\u00e0 \u00e9paississement l\u00e9g\u00e8rement.<\/li><li>Ajouter les haricots : \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re \u00e0 fentes, retirer les haricots de leur liquide de cuisson et les transf\u00e9rer sur le rago\u00fbt. Ajouter une ou deux louches de liquide de cuisson aux haricots dans la po\u00eale. Porter le m\u00e9lange \u00e0 \u00e9bullition et laisser mijoter jusqu&#8217;\u00e0 ce qu&#8217;il soit r\u00e9duit et \u00e9paissi (environ 10-15 minutes). Il devrait avoir la consistance d&#8217;un rago\u00fbt pas trop \u00e9pais (voir la troisi\u00e8me image ci-dessus). S&#8217;il est trop \u00e9pais, ajoutez plus de bouillon de l\u00e9gumes ou de liquide de cuisson \u00e0 partir des haricots.<\/li><\/ol>\n\n\n\n<p><strong><em>Faire griller les miettes de pain<\/em><\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dans une po\u00eale moyenne, chauffer l&#8217;huile d&#8217;olive et faire griller la chapelure en remuant fr\u00e9quemment jusqu&#8217;\u00e0 ce qu&#8217;elle commence \u00e0 dorer. Retirer du feu, assaisonner l\u00e9g\u00e8rement de sel et de poivre et incorporer le persil hach\u00e9.<\/li><\/ol>\n\n\n\n<p><strong><em>Sauge croustillante<\/em><\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Dans une petite po\u00eale, chauffer l&#8217;huile d&#8217;olive. Ajouter soigneusement les feuilles de sauge individuelles et les faire frire pendant environ 10-12 secondes, \u00e0 l&#8217;aide d&#8217;une fourchette ou d&#8217;une pince pour retourner doucement chaque feuille \u00e0 mi-chemin. Retirez-les rapidement et soigneusement de l&#8217;huile et posez-les sur une assiette recouverte de papier absorbant pour absorber l&#8217;exc\u00e8s d&#8217;huile.
