This winter has been (what seems like) never ending &amp; I cannot wait for the farmers markets to re-open again. Easter is just around the corner, so what is a better way to celebrate a new season other than an Easter inspired spinach &amp; artichoke galette. This dish combines two of my favourite spring produce ingredients and a hint of creamy yogurt. It is the perfect dish to serve for an Easter breakfast, brunch or lunch. They are meant to look beautifully rustic, so you don&#8217;t need to worry about crimping edges and creating lattice tops. While they are often filled with sweet fruit fillings, I decided to go the savoury route here. Who doesn&#8217;t love a spring breakfast pastry? Simply bring a pot of water to a boil and add the spinach. Cook until the spinach is wilted, about 2 minutes. Strain the water and squeeze out any excess liquid from the spinach. return false\"><img decoding=\"async\" src=\"http:\/\/testblog.french-barn.com\/wp-content\/uploads\/2015\/11\/recipe-print1.png\"><\/a><\/div><div id=\"y-recipe-link-46\" class=\"y-recipe-link fl-r hide-print\"> <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON yummly-button add-recipe\">Yum<\/a>\n<script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress&p=wp\"><\/script>\n                <\/div><div id=\"yrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong\" >Spring Spinach & Artichoke Galette<\/div>\n      <\/div><div class=\"ymeta yclear\">\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"yclear\">\n      <\/div>\n    <\/div><p id=\"yrecipe-ingredients\" class=\"h-4 strong\">Ingredients<\/p><ul id=\"yrecipe-ingredients-list\"><div id=\"yrecipe-ingredient-0\" class=\"ingredient-label\" >For the black pepper pie dough:\r<\/div><li id=\"yrecipe-ingredient-1\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup unsalted butter, cold & cubed\r<\/li><li id=\"yrecipe-ingredient-2\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cups all purpose flour\r<\/li><li id=\"yrecipe-ingredient-3\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 teaspoon salt\r<\/li><li id=\"yrecipe-ingredient-4\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 teaspoon black pepper\r<\/li><li id=\"yrecipe-ingredient-5\" class=\"ingredient\" itemprop=\"ingredients\">1\/4 cup ice water\r<\/li><div id=\"yrecipe-ingredient-6\" class=\"ingredient-label\" >For the galette:\u00a0\r<\/div><li id=\"yrecipe-ingredient-7\" class=\"ingredient\" itemprop=\"ingredients\">1 black pepper pie dough (see recipe above)\r<\/li><li id=\"yrecipe-ingredient-8\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup plain greek yogurt\r<\/li><li id=\"yrecipe-ingredient-9\" class=\"ingredient\" itemprop=\"ingredients\">salt & pepper, to taste\r<\/li><li id=\"yrecipe-ingredient-10\" class=\"ingredient\" itemprop=\"ingredients\">2 tablespoons extra virgin olive oil\r<\/li><li id=\"yrecipe-ingredient-11\" class=\"ingredient\" itemprop=\"ingredients\">1 garlic clove, minced\r<\/li><li id=\"yrecipe-ingredient-12\" class=\"ingredient\" itemprop=\"ingredients\">2 shallots, minced\r<\/li><li id=\"yrecipe-ingredient-13\" class=\"ingredient\" itemprop=\"ingredients\">1 teaspoon fresh thyme, roughly chopped\r<\/li><li id=\"yrecipe-ingredient-14\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup frozen spinach, strained\r<\/li><li id=\"yrecipe-ingredient-15\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup artichoke hearts, sliced\r<\/li><li id=\"yrecipe-ingredient-16\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup + 1\/4 cup gruyere, grated\r<\/li><li id=\"yrecipe-ingredient-17\" class=\"ingredient\" itemprop=\"ingredients\">1 egg, whisked for egg wash<\/li><\/ul><p id=\"yrecipe-instructions\" class=\"h-4 strong\">Directions<\/p><ol id=\"yrecipe-instructions-list\" class=\"instructions\"><div id=\"yrecipe-instruction-0\" class=\"instruction-label\" >For the black pepper pie dough:\r<\/div><li id=\"yrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">In a large mixing bowl sift together the flour, salt and black pepper.\r<\/li><li id=\"yrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Add the butter and work it into the flour mixture using your hands or a pastry cutter until a pea sized crumb mixture is formed.\r<\/li><li id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Slowly add in the water. Once the dough begins to come together, turn it out onto a floured surface.\r<\/li><li id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Shape dough into a disc, wrap in plastic wrap and chill in the fridge for 2 hours.\r<\/li><div id=\"yrecipe-instruction-5\" class=\"instruction-label\" >For the galette:\u00a0\r<\/div><li id=\"yrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Preheat oven to 375 degrees. Line a baking tray with parchment paper.\r<\/li><li id=\"yrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Once the dough has chilled roll out the dough to a 1\/4 inch thick circle. The diameter should be approximately 10 inches. Transfer to the lined baking sheet and set aside until ready to use.\r<\/li><li id=\"yrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">In a small mixing bowl whisk the yogurt. Season with salt & pepper. Set aside until ready to use.\r<\/li><li id=\"yrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">In a skillet over medium low heat add the olive oil, garlic, shallots and thyme. Cook until the shallots soften, about 5 minutes.\r<\/li><li id=\"yrecipe-instruction-10\" class=\"instruction\" itemprop=\"recipeInstructions\">Stir in the spinach and artichoke hearts. Season with salt & pepper. Cook for an additional 2 minutes.\r<\/li><li id=\"yrecipe-instruction-11\" class=\"instruction\" itemprop=\"recipeInstructions\">Remove from heat and stir in 1\/2 cup of the grated gruyere. Let cool for 15 minutes.\r<\/li><li id=\"yrecipe-instruction-12\" class=\"instruction\" itemprop=\"recipeInstructions\">Begin to assemble the galette starting with the greek yogurt. Spread the mixture evenly across the dough leaving a 1-inch boarder for the crust.\r<\/li><li id=\"yrecipe-instruction-13\" class=\"instruction\" itemprop=\"recipeInstructions\">Top with the spinach mixture followed by the remaining 1\/4 cup of gruyere cheese.\r<\/li><li id=\"yrecipe-instruction-14\" class=\"instruction\" itemprop=\"recipeInstructions\">Brush the edges with the egg wash and fold over the 1-inch boarder to form the crust. Brush the top crust with egg wash.
