They would usually turn out\u00a0too dense and\u00a0firm, or sometimes just the opposite &#8211; so soft that they would almost dissolve\u00a0as I boiled them in water.<\/p>\n<p>I recently came across\u00a0<a href=\"http:\/\/luckypeach.com\/how-to-make-gnocchi\/\" target=\"_blank\">this article<\/a>\u00a0from The Lucky Peach. It\u2019s a step-by-step gnocchi guide\u00a0by Marco Canora, the\u00a0chef at Hearth restaurant in New York, who\u00a0claims to have made gnocchi some-forty thousand times. But sometimes simple things can be the most intricate.\u00a0In the context of\u00a0gnocchi, not\u00a0only do different potato varieties behave differently, but their age matters, the way they\u2019re cooked matters, the temperature at which they\u2019re mixed with flour matters. I can go on. This is why recipes have failed me in the past\u00a0and this is exactly where Marco\u2019s guide gave me hope. It doesn\u2019t offer\u00a0specific quantities, but has\u00a0all the little steps and bits of sensory guidance that\u00a0you will need.<\/p>\n<p>For today\u2019s recipe I decided to give Marco\u2019s gnocchi a shot.\u00a0Mine didn\u2019t turn out\u00a0perfect but I have faith that with practice and my new-found understanding of the process, they will improve.\u00a0They were, however,\u00a0much better than anything I\u2019ve made in the past or bought at the supermarket. I would encourage you to try them out as well, but I won\u2019t insist. Sweet roasted acorn squash and\u00a0pan-fried gnocchi are\u00a0complemented with crispy bacon and sage leaves on a family-style platter, with hopes that everyone around the table can enjoy a few indulgent bites. Use your hands to evenly coat them with the oil and salt.\r<\/li><li id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Bake for 25 - 30 minutes, until soft and golden on the bottom.\r<\/li><li id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">While the squash is cooking start cooking the bacon. Over low heat on the stove top, in a medium skillet, slowly cook the bacon, allowing the fat to render, until the bacon is crispy. Remove the bacon from the pan, reserving the fat.\r<\/li><li id=\"yrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">If enough fat has rendered to generously coat the bottom of the skillet, use it to fry the sage. If there isn't enough bacon fat, add a little bit of butter.\r<\/li><li id=\"yrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Add the sage leaves to the skillet and cook for a minute or so on each side, until crispy. Remove the leaves from the skillet and set aside.\r<\/li><li id=\"yrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Drain the bacon fat and scrape any browned bits off the bottom of the skillet (clean it if necessary). You can add back the bacon fat to fry the gnocchi (supplement with butter, if necessary) or just go all-butter, up to you. \r<\/li><li id=\"yrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">Over medium heat, warm up your chosen fat and add the gnocchi to the skillet. Cook for 3 - 4 minutes on each side until golden brown. Cook them in batches, if necessary, without overcrowding the skillet.\r<\/li><li id=\"yrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">When the squash is ready, remove it from the oven and arrange on a serving platter. Top with gnocchi, bacon and crispy sage leaves. Season with salt and freshly cracked black pepper and serve right away.<\/li><\/ol><p id=\"yrecipe-notes\" class=\"h-4 strong\">Notes<\/p><div id=\"yrecipe-notes-list\"><p class=\"notes\">The prep time does not include home-made gnocchi.
