Though there may be constants in your exploration of French food while you are there (great bread, wine, pastries and cheeses), each region offers something a little different, meaning you could quite literally spend years traveling to different parts of France and discover something new each time you went.\u00a0 I&#8217;ve spent the better part of a decade escaping to France at every opportunity and have had the great fortune to explore a lot of the different regions (though I still feel like I have only barely scraped the surface!). It may seem like a simple dish but for me, it epitomizes the classic French bistro dish &#8211; simple food, cooked very well. To my mind, a plate of tender steak served with a classic sauce (think green peppercorn) with a mound of piping hot, crispy-on-the-outside, fluffy-on-the-inside fries (with a green salad) can rival even the fanciest <em>haute-cuisine<\/em> or molecular gastronomy dish.\u00a0 I recently enjoyed a magnificent rendition of this dish at <a href=\"http:\/\/www.labourselavie.com\/\" target=\"_blank\">La Bourse et la Vie<\/a> (12 Rue Vivienne, 75002 Paris, France). If you can&#8217;t get to Paris anytime soon, bring Paris to you via this <a href=\"http:\/\/www.eatlivetravelwrite.com\/2014\/11\/mastering-the-art-of-french-eating-now-in-paperback-and-a-giveaway\/\" target=\"_blank\"><em>steak-frites<\/em> recipe.<\/a><\/p>\n<figure id=\"attachment_1236\" aria-describedby=\"caption-attachment-1236\" style=\"width: 900px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-full wp-image-1236\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2015\/11\/Moet-et-Chandon-tasting-room-e1446496403117.jpg\" alt=\"Moet et Chandon Champagne\" width=\"900\" height=\"598\" \/><figcaption id=\"caption-attachment-1236\" class=\"wp-caption-text\">Moet et Chandon tasting room<\/figcaption><\/figure>\n<p>The <strong>Champagne<\/strong> region is known, of course for champagne. Used with permission.<\/figcaption><\/figure>\n<p>According to Jill, it&#8217;s a &#8220;must eat&#8221; if you find yourself in the area in the summer &#8220;<em>since it brings out the flavours of dark cherries at this time of year and is appreciated at home served simply or dressed up for all sorts of restaurants as a French classic. \u00a0Other versions exist using peaches, mirabelles, apricots etc. but there\u2019s nothing to beat this dessert with good old dark cherries &#8211; and with the stones. However, I\u2019ve been playing with a couple of different savoury asparagus clafoutis &#8211; would recommend trying out these variations too for a light supper.&#8221; <\/em>Find Jill&#8217;s recipe for the classic cherry <em>clafoutis<\/em> <a href=\"http:\/\/madaboutmacarons.com\/2015\/06\/french-clafoutis-baked-cherry-custard\/\" target=\"_blank\">here<\/a>.<\/p>\n<p>We loved<strong> Southwest France<\/strong> so much <a href=\"http:\/\/www.neracvacationrental.com\" target=\"_blank\">we bought a house there<\/a>! In terms of its cuisine, it&#8217;s heavier than its counterpart further south as this is the land of duck. From <em>foie<\/em> to <em>magret<\/em>, <em>confit<\/em> to <em>rillette<\/em> you&#8217;ll find all manner of dishes featuring duck. The famous <em>pruneaux d&#8217;Agen<\/em> (visit the <a href=\"http:\/\/www.musee-du-pruneau.com\/\">Mus\u00e9e du Pruneau<\/a> in Lafittte-sur-Lot for tastings and a fascinating look at production) are ubiquitous as is Armagnac (check out Ladev\u00e8ze in the tiny circular town of Fourc\u00e8s for a lesson in how to taste it properly!).<\/p>\n<p>If you won&#8217;t be visiting the South West this summer, try a taste of summer with your duck and make this <a href=\"http:\/\/producemadesimple.ca\/duck-red-wine-cherry-sauce\/\">Duck with a Red Wine Cherry Sauce.<\/a><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1966\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/DSC_8524-e1467301154226.jpg\" alt=\"Duck with a red wine cherry sauce by Mardi Michels\" width=\"900\" height=\"900\" \/><\/p>\n<p>Another staple in Southwest France is cassoulet. Though you&#8217;ll find it all over the South West from Carcassonne to Toulouse,\u00a0 <strong>Castelnaudary<\/strong> is said to be the &#8220;Cassoulet Capital&#8221; of France.\u00a0 There is even a society &#8211; <em>La Grande Confr\u00e9rie du Cassoulet de Castelnaudary<\/em> &#8211; that\u00a0defends and protects the dish, as they believe it is supposed to be made, and a &#8220;<a href=\"http:\/\/www.fete-du-cassoulet.com\/\"><em>F\u00eate du Cassoulet<\/em><\/a>&#8221; in August each year.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1965\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/DSC_1339-e1467300734798.jpg\" alt=\"Cassoulet de Castelnaudary by Mardi Michels\" width=\"900\" height=\"900\" \/><\/p>\n<p><a href=\"http:\/\/www.kitchen-at-camont.com\/\" target=\"_blank\">Kate Hill<\/a>, who has been teaching others about the\u00a0food of Southwest France since 1991 and runs cookery and butchery\/charcuterie classes (from 1 day to 1 month) literally <a href=\"http:\/\/www.kitchen-at-camont.com\/cassoulet-a-french-obsession-book\/\" target=\"_blank\">wrote the book on cassoulet<\/a> and having tasted it first-hand, I can tell you it&#8217;s the real deal!<\/p>\n<p>If you&#8217;re a wine fan, you probably already have <strong>Burgundy<\/strong> on your &#8220;must visit&#8221; list.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1962\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/DSC_0927-e1467299361956.jpg\" alt=\"Grapes in Burgundy by Mardi Michels\" width=\"900\" height=\"927\" \/><\/p>\n<p>Check out the beautiful town of <strong>Beaune<\/strong>, and make the <em><a href=\"http:\/\/www.marcheauxvins.com\/\" target=\"_blank\">March\u00e9 aux Vins<\/a>\u00a0<\/em> your first stop. The <em>March\u00e9<\/em> offers visitors the option of tasting some of the greatest Burgundian wine, all in one location, so if you don&#8217;t have a lot of time, this is the place to come.\u00a0 Located in a stunning building dating back to the late 14th\/ early 15th Century, it&#8217;s a must-see even just for its architecture.\u00a0 You can take a guided tour or opt for the self-guided option.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1963\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/Marche\u0301-aux-vins-Beaune.jpg\" alt=\"March\u00e9 aux vins in Beaune by Mardi Michels\" width=\"700\" height=\"235\" srcset=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/Marche\u0301-aux-vins-Beaune.jpg 700w, https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/Marche\u0301-aux-vins-Beaune-300x101.jpg 300w, https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/Marche\u0301-aux-vins-Beaune-330x111.jpg 330w, https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/Marche\u0301-aux-vins-Beaune-690x232.jpg 690w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>For another taste of Burgundy&#8217;s finest, visit <a href=\"http:\/\/www.cotedor-tourisme.com\/bourgogne\/location-de-salles\/caves-des-cordeliers_SALBOU0210000104_fiche.html\" target=\"_blank\"><em>La Cave des Cordeliers<\/em><\/a> &#8211; the oldest convent in town, founded in the 13th century.\u00a0 Similar to the <em>March\u00e9 aux Vins<\/em>, here you can wander the cellars with a special souvenir &#8220;<em>tastevin<\/em>&#8220;, taking in 5 Burgundy wines for a small fee or wander the cloister, cellars and the stunning Chapter Room for no charge.<\/p>\n<p>When in Burgundy, you can&#8217;t miss <strong>Dijon<\/strong>.\u00a0 You might have heard of Maille &#8211; French company that you probably know for its grainy &#8220;Dijon&#8221; mustard.\u00a0 Well, if you are a fan, this is the place to visit the <a href=\"http:\/\/www.maille.com\/en_US\/boutiques?sid=dijon\" target=\"_blank\">Maille mustard store.<\/a><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1961\" src=\"https:\/\/french-barn.com\/blog\/wp-content\/uploads\/2016\/06\/DSC_1085-e1467299218801.jpg\" alt=\"Maille mustard store in Dijon by Mardi Michels\" width=\"900\" height=\"598\" \/><\/p>\n<p>In fact, the mustard can be traced back to 1720 when Maille founder Antoine Claude Maille developed an antiseptic form of vinegar which residents of Marseille used to spray themselves with to keep the plague at bay! Maille was founded in Paris in 1747 and in 1760 became the official supplier to the Austrian and Hungarian royal families.\u00a0 In 1769 Maille became the official vinegar maker and distiller for the King of France.
