Growing up in the Niagara region, which is full of vineyards &amp; orchards, my grandma would always take my sisters &amp; I to Niagara-On-The-Lake every single June to pick\u00a0strawberry baskets full of fresh Ontario strawberries. It was our first outing to celebrate the end of another school year.<\/p>\n<div style=\"width: 720px;\" class=\"wp-video\"><video class=\"wp-video-shortcode\" id=\"video-1787-1\" width=\"720\" height=\"1080\" preload=\"metadata\" controls=\"controls\"><source type=\"video\/mp4\" src=\"http:\/\/www.french-barn.com\/blog\/wp-content\/uploads\/2016\/05\/cream-gif.m4v?_=1\" \/><a href=\"http:\/\/www.french-barn.com\/blog\/wp-content\/uploads\/2016\/05\/cream-gif.m4v\">http:\/\/www.french-barn.com\/blog\/wp-content\/uploads\/2016\/05\/cream-gif.m4v<\/a><\/video><\/div>\n<p style=\"text-align: justify;\">While my absolute favourite part of strawberry picking was getting to ride the tractor wagon throughout the farm fields, munching on strawberries wasn\u2019t too bad either. It is safe to say I always ate way more then I put in my basket. Aside from eating strawberries until you get a stomach ache, there are so many things you can make with them. The butter based crust is filled with a classic French pastry cream (cr\u00e8me patisserie) . This filling can work with all sorts of desserts; cakes,\u00a0p\u00e2t\u00e9 \u00e0 choux or beignets to name a few. Stir until evenly combined. Sift in the flour & mix until a dough is formed. Press dough into tart pan or tartelette molds, creating an even crust.\r<\/li><li id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Place in the freezer for a few minutes to allow the dough to chill & firm up.\r<\/li><li id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Bake for 12-15 minutes or until the edges begin to slightly brown.\r<\/li><li id=\"yrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Let cool completely before filling with the pastry cream.\r<\/li><div id=\"yrecipe-instruction-6\" class=\"instruction-label\" >For the pastry cream filling\r<\/div><li id=\"yrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">In a saucepan over medium heat bring the milk to a simmer.\r<\/li><li id=\"yrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">In a mixing bowl whisk the egg yolks, sugar, cornstarch & flour. Temper in the hot milk, then add the tempered egg mixture back into the sauce pan.\r<\/li><li id=\"yrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">Slowly bring to a boil, stirring constantly so the cream does not burn.\r<\/li><li id=\"yrecipe-instruction-10\" class=\"instruction\" itemprop=\"recipeInstructions\">Once the mixture boils & thickens, remove from heat. Stir in the vanilla & butter until fully incorporated.\r<\/li><li id=\"yrecipe-instruction-11\" class=\"instruction\" itemprop=\"recipeInstructions\">Let cream chill before adding to the tartelette pans.\r<\/li><li id=\"yrecipe-instruction-12\" class=\"instruction\" itemprop=\"recipeInstructions\">Fill each tartelette to the top with pastry cream.
