Gluten-free: fad or fact?

We know this can be a touchy subject, so let’s get one thing out of the way: there are “true” celiac people who are indeed allergic to gluten. This is a medical condition that will continue to exist, and must be addressed, regardless of the latest Hollywood trends.

Despite the fact that only 1% of the population is truly gluten-intolerant, it seems that everything on our grocery shelves today, from burgers to ice cream and industrial pastries, should have a gluten-free version, because it’s healthier. Even foods that should NOT contain gluten to begin with are labelled as gluten-free!

Gluten is a necessary ingredient to create traditional French pastries, and this article is a great reminder of why using the right ingredients is more important than trying to avoid this or that!
